“Chicken Salad Chick is growing rapidly, and we recognized a tremendous opportunity to help expand the brand in Florida,” said Carter, co-owner of Chicken Salad Chick in Naples. “Given the demographics and climate in the area, chicken salad is a year-round product. We are excited to introduce the southern hospitality experience to local residents and look forward to serving the Naples community for many years to come.”

Prior to Chicken Salad Chick, Carter owned and managed 50 Godfather’s Pizza restaurants, a fast casual pizza franchise. He decided he was ready to switch gears once he tried Chicken Salad Chick for the first time while moving his daughter to college in Auburn, Ala. Carter saw an opportunity combining his passion for business and entrepreneurship with Chicken Salad Chick’s unique concept. After a conversation with Stacy and Kevin Brown, founders of Chicken Salad Chick, Mike was sold on expanding the brand to Florida.

The Chicken Salad Chick concept, born in Auburn, Ala., was established in 2008 in the kitchen of founder, Stacy Brown. When Stacy discovered that the local county health department would not allow her to continue making and selling her delicious recipes out of her home kitchen, she overcame that obstacle by launching her first restaurant with the business expertise of her future husband and fellow founder, Kevin Brown. Together, they opened a small takeout restaurant, which quickly grew; the company now has 53 restaurants across the Southeast.
