World Champion Pizza Maker and Detroit Style Pizza Co. President Shawn Randazzo crafted his gluten-free pizza recipe after his wife, Keri, was diagnosed with celiac disease. They made your teeth squeak. It was like eating crackers. That’s not what you expect or want from pizza, so I decided to develop my own recipe so people who suffer from celiac disease and other gluten-related conditions can enjoy a flavorful pizza that has a filling crust. The key to a delicious gluten-free pizza is the dough, as most other pizza ingredients are naturally gluten-free. In 2012 Randazzo was named World Champion Pizza Maker, the international pizza industry’s most prestigious title, which uniquely qualified him to create a game-changing gluten-free pizza recipe. In addition to using gluten-free ingredients, Detroit Style Pizza Co. takes great care to prevent gluten contamination in the kitchen.
It only takes 1/64 of a teaspoon of gluten to cause small intestinal inflammation; and as such gluten contamination is a common problem in restaurant kitchens where many different dishes are rapidly prepared. The Detroit Style Pizza Co. kitchen features two separate food prep areas, one for gluten-free ingredients, the other for gluten ingredients, which are also stored separately. In addition, Detroit Style Pizza Co. uses separate utensils for gluten-containing and gluten-free ingredients, and employees are specifically trained in proper gluten-free food preparation.
