The diner selects the allergens they need to avoid and, with the touch of a button, the menu items that are safe to eat are displayed. In addition to displaying items that may be “safe to eat” , the AST suggests menu items that are “safe to eat with minor modifications.”

On an average, the AST technology increases the number of options available for guests with food restrictions by over 70%. Examples include being able to remove the wheat allergen from a salad by serving it without croutons, removing the egg allergen from a burger by serving it without a particular sauce or, making tortilla soup safe for a customer with a milk allergy by serving it without the dollop of sour cream and sprinkle of cheese on top.

“These small changes are sometimes difficult for the operator to identify and nearly impossible to express on a printed allergen chart,” says Atul Ahuja, co-founder of Gipsee. “Our platform was designed to help the restaurant identify potential modifications and communicate those options in a way that is easy for the consumer to understand at the point of ordering.”
