Sauce Nouvelle serves sandwiches and salads elevated by innovative sauces inspired by local PNW ingredients.
Nicholas Ganea opened Sauce Nouvelle back in May after several chef stints at restaurants around the country including NY, and Chicago. He landed on Bainbridge Island after his friend introduced him to the owners of the Winslow Mall, and decided it was the perfect spot to start his next adventure.
Formerly a retail space, Sauce Nouvelle was transformed into an open space cafe with clear sight lines of the kitchen. Tables and chairs are located outside for customers that want to linger over their meals.
A rotating menu features sandwiches and salads elevated by innovative sauces inspired by local PNW ingredients such as a peach parsnip romesco or PNW Rainier cherry sauce.
The most talked about sandwich is the Rainier Cherry Roasted Beef with garlic aioli, pickled red onions and arugula on a ciabatta roll.
Unlike other chefs and restaurant owners, Nicholas isn’t afraid to take items off the menu even if they’re a customer favorite. He believes that this creates more room for creative expression, and a new opportunity for growth.
