Centennial, CO based The Egg & I Restaurants announces the opening of its newest restaurant located in Castle Rock, Colorado. This will be the 107th restaurant opening for the brand and its 26th opening in Colorado. The restaurant is locally owned and operated by Cal and Teresa Weatherly and opens on October 27th at 6:00 a.m. It is located at 2240 Mercantile Avenue, Unit 100, directly west of the Castle Rock Adventist Hospital in the Meadows.
On October 26th, the restaurant will donate 100% of all proceeds from its private, pre-opening training day to Children’s Diabetes Foundation. The Foundation’s mission is to raise funds to support the Barbara Davis Center for Childhood Diabetes, where more than 6,000 children and young adults from all over the world receive the finest diabetes care available. Through the generosity of corporate partners like The Egg & I, we are able to serve more neighbors in need in our community,” said Marian Rewers, Interim Executive Director at Children’s Diabetes Foundation.
