Restaurant Known for Blazing, Bold Flavors Continues to Soar
Firebirds Wood Fired Grill recently opened its 25th location in Morrisville, N.C. The restaurant is known for its Classic American cuisine infused with bold flavors, fresh herbs and spices, and specializes in aged steaks, fresh seafood, chicken and ribs seared over a wood fired grill.
The thriving new dining concept of Firebirds is located in nine states with new growth on the horizon. Dennis Thompson, who co-founded Lone Star Steakhouse & Saloon and was an original owner of Fox and Hound Bar & Grill, is the creative mind behind the Firebirds concept and founded the restaurant with Doug Glendenning, former president of Lone Star.
Thompson spent several years in Colorado where he drew from his dining experiences to develop the food and flair of Firebirds. He wanted a restaurant that provided an upscale dining experience with the best quality dishes, a warm ambiance and the most talented staff at moderate prices. But first and foremost, Thompson needed a strong leader with a true passion for people, team building and creating a fun environment. In 2004 he hired Mark Eason as CEO, one of the top restaurant professionals in the dining industry with more than 30 years of experience.
“For a restaurant to be successful it not only has to offer delicious cuisine, but the entire dining experience has to come full circle,” said CEO Mark Eason. “From the savory aromas that even fill the outside air, to the knowledgeable and gracious staff, to the warm ambiance and flavorful dishes using homemade ingredients, the experience at Firebirds starts from the moment our guests arrive in the parking lot.”
From cutting the perfect steak that is done in the kitchen, to selecting the best blend of herbs and spices, each dish is prepared on site from start to finish. In addition, every dish is seared over an authentic wood indigenous to the restaurant’s location, which presents a distinct flavor in different areas of the country.
Guests can enjoy a breadth of menu selections including its signature Slow Roasted Prime Rib, Firebirds BLT Salad, Chile Rubbed Delmonico, Wood Grilled Salmon, Lobster Spinach Queso and Creme Brulee Cheesecake. Children can also order from a healthy Kids’ Menu that even features Sirloin Steak. The award-winning FIREBAR hosts a selection of private Firebirds’ label wines and specialty cocktails such as the Double Black Diamond Martini infused with natural, fresh pineapple for 21 days.

The restaurants feature an exposed kitchen, an indoor stone fireplace, a cozy outdoor patio and its own FIREBAR that includes a waterfall display of colorful bottles. Dark woods, vivid colors and comfortable seating create a cozy and intimate dining room setting.
Guests are also encouraged to support Firebirds initiative to help fight childhood cancer – Firebirds will donate $1 to Alex’s Lemonade Stand each time they purchase fresh squeezed lemonade.
Firebirds is open Monday – Thursday from 11 a.m. until 10 p.m. and Friday – Saturday from 11 a.m. – 11 p.m. Guests can also enjoy half priced appetizers and drink specials from the FIREBAR weekdays from 4 – 6:30 p.m. at the bar and at the outdoor patio.
