New Coconut Cream Slab Pie joins the limited-time-only specials for a limited time
Mimi’s, the popular neighborhood café offering French-inspired American comfort food, is bringing back a guest favorite and offering a new Coconut Cream Slab Pie for the summer.
Beginning today through mid-September, Mimi’s guests can enjoy Chicken Under a Brick, fire-grilled half chicken cooked “under a brick” for crisp, crackling golden brown skin with juicy breast, wing and leg meat in two flavors, starting at $16.49:
- Cowboy Rub Brick Chicken – brick chicken with flavors of rich, smoky chipotle peppers, garlic, cilantro and lime, topped with pickled red onions and served with roasted western potatoes and hand-made ranch salad
- Provencal Garlic Brick Chicken — brick chicken with flavors of lemon and herbes de Provence, served with baked cheesy gratin potatoes and red wine vinaigrette salad

Mimi’s CMO Stewart Slocum explains the appeal: “’Under a Brick’ is an innovative way to cook chicken, with the added weight making the skin crispy and golden brown while the meat remains juicy. Chicken Under a Brick is one of our most beloved culinary offerings, and we are excited to bring it back for our guests this summer.”
Mimi’s recently introduced deep dish slab pies made in-house and with extra flaky hand-made thick crust in three mouth-watering flavors. In addition to the limited-time-only Coconut Cream Slab Pie, Mimi’s guests can choose from French Silk Mud Pie (smooth chocolate, coffee and cream with graham cracker crust and Ghirardelli chocolate drizzle) and Crème Brûlée Cheesecake (French vanilla buttermilk cheesecake caramelized sugar top and graham cracker crust).
The Coconut Cream Slab Pie (rich and creamy slab pie made with coconut milk and macadamia nut graham cracker crust, topped with praline toasted coconut) will be offered for a limited time through September.
