Celiac disease is a permanent intolerance to gluten that results in damage to the small intestines. The reaction comes from certain proteins found in many grains like wheat, barley, oats and rye, also known as glutens. The symptoms can be reversible with a gluten-free diet. One in every 133 Americans are affected by celiac and require a gluten-free diet.
