Tocaya Refresh Brings Fresh Seasonal Flavors
Fall is in full swing, and Tocaya is celebrating the change of seasons with a full lineup update across its modern Mexican lineup. Guests can dive into a mix of limited-time seasonal picks, fresh drink options, upgraded sweets, and a couple of fan favorites that are sticking around for good.
Headlining the launch is the Carnitas con Piña Taco, available starting Oct. 1. It layers slow-braised pork shoulder and smashed pinto beans beneath a bright piña salsa. Crafted with grilled pineapple, the brand’s signature “holy trinity” salsa, lime, escabeche, chipotle, and cilantro, the salsa delivers a smoky sweetness with a bit of citrus and heat.
If you’re looking for a heartier meal, the Fall/Winter Manzana Salad brings together carne asada and mole over a blend of kale, cabbage, shaved radish, crisp apples, roasted sweet potatoes, butternut squash, cilantro, queso fresco, and pepitas, all tossed in an apple cider honey dressing.

“We wanted this menu to feel comforting while still bringing the fresh ingredients and vibrant combinations Tocaya is known for,” said Oliver Plust, corporate executive chef at Tocaya. “The Carnitas con Piña Taco brings that balance through smoky grilled pineapple, bright citrus and subtle heat, while the Manzana Salad takes a different approach with roasted squash, crisp apples and mole. Both dishes show how Tocaya’s signature approach can turn familiar favorites into something unexpected.”
Sweets, Refreshing Drinks, and Catering Updates
The updates don’t stop with the savory dishes. For dessert, both the Vegan and Non-Vegan Churros are now served alongside a rich new vegan chocolate dipping sauce. Plus, churros can now be ordered through the catering menu for gatherings and events.
To wash it all down, two new handcrafted drinks are joining the lineup:
- Tamarindo Agua Fresca: A refreshing classic packed with sweet and tangy fruit notes.
- Hibiscus Ginger Tea: A soothing blend combining floral hibiscus with a warm ginger kick.
Permanent Additions Join the Lineup
Along with the temporary autumn items, two popularity-proven dishes have earned a permanent spot on the menu:
- Chicken Flaquitos: Crispy flour tortillas packed with chicken tinga, smashed pinto beans, and Oaxaca cheese, served with a creamy salsa verde. ($10.65 retail / $7.25 happy hour)
- Ceviche: Poached shrimp tossed in a Tapatio and lime marinade, topped with smoky heirloom tomato and jalapeño sauce, served alongside tortilla chips. ($10.85 retail / $7.45 happy hour)
Whether you’re craving the sweet-and-savory combo of slow-braised pork and grilled pineapple or looking to sip a warm hibiscus tea, the latest lineup brings a fresh take on modern Mexican cooking.
