A Collaboration of Culinary Expertise

To develop the new offerings, CRÚ collaborated with Mark Brezinski, a well-known veteran of the Dallas restaurant scene. The resulting menu emphasizes authentic flavors, Italian-inspired staples, and a variety of shareable plates designed to complement the bistro’s extensive wine list.

“Our goal with this menu was to elevate our offerings without losing what makes CRÚ special,” said Jim Oetting, Culinary Director for CRÚ Wine Bar & Bistro. “These dishes were created to pair naturally with our wines and encourage guests to explore, share, and stay awhile.”

Dinner and Shareable Highlights

The new dinner menu features premium proteins and artisan techniques, including:

  • Barolo Braised Short Rib: Slow-braised beef finished in Barolo wine, served over creamy butternut squash risotto with natural jus.

  • Cast Iron Seared Wagyu Picanha Steak: Rich, tender wagyu paired with crisp papas bravas, jumbo asparagus, and fresh chimichurri.

  • Jumbo Scallops: Perfectly seared scallops atop spinach parmesan risotto with heirloom tomato butter sauce.

  • Chicken alla Francese: Lightly crisped chicken with a bright lemon-herb sauce and garlicky broccolini.

  • Roman-Style Pinsa Pizzas: Hand-stretched, airy crusts topped with San Marzano tomato sauce and fresh mozzarella.

  • New Shareable Plates: A variety of boards and bites including Wagyu Meatballs, Goat Cheese Beignets, Braised Short Rib Arancini, and New Zealand Lamb Lollipops.

Elevated Weekend Brunch

The daytime menu has received a similar upgrade, focusing on high-quality ingredients and indulgent favorites. Guests can now enjoy items like Brioche French Toast with lemon mascarpone, Steak and Eggs featuring wagyu picanha, and a Fromage Omelette made with premium Nancy’s Camembert.

Looking Ahead
