Quick-casual seafood brand welcomes seasoned executives to guide next phase of expansion
As part of its ongoing strategy to expand operations and deepen its roots across Louisiana, Off The Hook Restaurants has announced three appointments: John Lush as chief operating officer, Bailey Richard as director of marketing, communications and compliance and Randy Gross as director of operations.
The new team members bring a strong track record in restaurant and hospitality management and will play a critical role in driving operational efficiency, brand visibility and overall performance as the company accelerates its growth across the region.
“I’m incredibly proud of the team we’ve built at Off The Hook,” said Paxton Moreaux, CEO of Off The Hook Restaurants. “These new team members bring proven expertise and fresh energy to the table, and they’re already making an impact as we chart our course for the future. Together, we’re setting new standards in the industry and delivering exceptional experiences to our guests.”
A seasoned operator with a strong background in scaling multi-unit restaurant brands, Lush will oversee day-to-day operations and drive strategic initiatives to streamline performance and align with long-term business goals.

Richard is tasked with Off The Hook’s marketing, public relations and compliance efforts, responsible for amplifying the company’s voice, elevating brand visibility and ensuring regulatory standards are met across all markets.

Gross will manage field operations and restaurant performance, working closely with regional teams to ensure consistency, efficiency and high-quality guest experiences across all locations.
