Seasoned professionals can learn to manage menus for special dietary needs; attain certification as Master Trainer

Restaurant professionals can sign up now to attend the AllerTrain Master Trainer Program offered April 8 and 9 by MenuTrinfo, a leader in menu and nutritional analysis for food service operators and restaurants.

Designed for seasoned food industry professionals and food safety trainers, the new program teaches how organizations can handle and manage menu items for those with special dietary needs. Covered topics during the two-day session in Fort Collins, Colo. include food allergens, intolerances and celiac disease, policies, laws and regulations, prevention of cross contamination, and safe food handling and storage practices. Attendees will learn how to manage and teach food safety literally from the loading dock to the tabletop.

After the session, attendees will be certified AllerTrain instructors – able to train their own employees on how to make menus safe for the increasing body of allergy-sufferers in the U.S. Food trainers will also be able to incorporate teaching on food allergens and gluten-free into their curriculum.

The Centers for Disease Control reported that the number of U.S. children who have food allergies rose by 50 percent from 1997 to 2011, and, according to a 2012 Mayo Clinic Study, celiac disease is more common than previously thought. As a result, every restaurant operator and food service professional is on notice. Not only are tastes changing due to dietary restrictions, menu design now has life or death consequences. The AllerTrain Master Trainer program is designed to give operators the solutions to manage these new issues.
