Tender Greens Introduces Spring Menu Featuring New and Updated Seasonal DishesAs spring symbolizes new beginnings and renewal, Tender Greens is drawing inspiration from the season’s vibrant flavors. The latest spring menu, developed by Chef Oliver Plust, Corporate Executive Chef for Tender Greens, showcases a selection of revamped dishes along with introductions to the menu featuring the freshest ingredients sourced from local farmers.

Beginning March 12 and available through summer, the Tender Greens Spring Menu offers guests an enhanced take on seasonal dining. Updated menu items include:

  • Spring Harvest Salad – Creamy Laura Chenel goat cheese, sweet strawberries, seasonal citrus, toasted almonds, roasted onions, and herbs over baby lettuce, finished with a golden balsamic vinaigrette.
  • Spring Seasonal Vegetables – a mix of carrots, mushrooms, snap peas and green beans* (*subject to availability).
  • Pineapple Basil Agua Fresca – a smooth blend of juicy pineapple and aromatic basil, crafted into a crisp, naturally sweetened beverage.

Recently added items to the permanent menu include:

  • Great Northern Braised Beans Plate – Braised beans simmered with herbs, tomato sauce and sunflower seed pesto, served with a choice of two sides.
  • Happier Vegan (New Recipe) – Baked falafel paired with braised beans, silky hummus drizzled with EVOO, heirloom cherry tomatoes, pickled cucumbers, onions, roasted peppers, baby lettuces, sunflower seed pesto and a sherry vinaigrette.
  • Chicken Pesto Pasta – Grilled chicken tossed in sunflower seed pesto and casarecce pasta, complemented by green beans, roasted potatoes, Divina tomatoes, basil and parmesan cheese.
